Chia seeds provide a food source with the greatest amount of Omega 3, more than any other source of vegetable and/or marine origin. It is also rich in protein, fat, fiber and antioxidants (while low in sodium), outperforming in all these aspects popular cereals such as oats, barley, wheat, maize and rice (highly popular cereals in animal feed products and control diets). As for the most important antioxidants in chia seeds are chlorogenic and caffeic acids, as well as flavonols myricetin, quercetin and kaempferol. In addition, chia is an excellent source of calcium, phosphorus, magnesium, potassium, iron, zinc and copper. Chia contains 13 to 354 times more calcium, 2 to 12 times more phosphorus and 1.6 to 9 times more potassium per 100 grams of edible portion than wheat, rice, barley, oats and maize, respectively. It also has 6 times more calcium, 11 times more phosphorus and 4.6 times more potassium than the same serving of milk. Regarding the level of iron that can be found in chia seeds, it is unusually high for a seed, and as compared to other traditional products known as rich sources of iron, it has 6, 1.8 and 2.4 times more iron per 100 grams of edible portion than spinach, lentils and beef liver, respectively. It has fewer carbohydrates than many other grains and it is highly appreciated as a source of energy to achieve athletic endurance. It can be directly taken as a seed or, after undergoing a production process, in the form of oil or as crushed pellets, extruded seeds or flour.
